I plug iphone into macbook pro and sync just as a bit more information to help answer or add to my discussion
You don't sync mail at all. iphone has an e-mail client that retrieves mail from the server just as your computer does.
Other couls be favorites, history, voicemail, app data, calendar events, contacts, etc.
To keep your email account settings synced across devices (in case you have to make a change). Other is everything not listed on the tabs, including the iOS, settings, contacts, calendar events, Safari bookmarks/cache/cookies, email and email attachments, SMS/MMS/iMessages, notes, app data, Safari cache, cookies and bookmarks, stored passwords, search index, home screen organization, wi-fi network data, etc.

Reply something about what benefit of syncing mail if it doesn t sync email messages what other when you sync as all tabs or things are labelled iPhone 3G or Post a New Thread
