I am traveling from New Zealand to the US for a couple of months.  What I am planning to do is buy a sim card in the US when I get there but I won't have a computer to connect the phone to iTunes. Will voice and data work if I don't?

You can always go to an apple store to use their computers. just make sure you make an appointment
