if i restore my iphone 4, completely resetting it, will i lose my cellular data? like will i have to go to the sprint store and have them re-put my number back on the phone or will it stay on my phone and only erase my apps, contacts, music, ect?

No.

All of this content should be on your computer anyway,  you can just sync it back.
