IPhone 3G and number of bluetooth devices

Cant locate the answer, howm many bluetooth devices can the iphone be paired withat one time? I just upgraded from a blackberry and was able to have the MS Sync in my car paired for hands free in the car and a normal Plantronics bluetooth headset for outside the car.
I have the Sync paired for the car, but cannot get the Plantronics paired

At the present, if you’ve paired iPhone with a device and want to use another device instead, you
must unpair the first device.
