It will work, but they will have no warranty or support for the phone in Taiwan...none. iPhone warranty is not International, and warranty/support for a US purchased iPhone will only be valid in the US. The phone will have to be physically returned to you, in the US, and then you will have to go to an Apple store. Have you factored in any import duties? Once you do that & consider the warranty issue, still sound like a smart thing to do?
