When I add a contact through the phone function that contact does not seem to go to my gmail contacts without me entering it manually.
I have 3 "groups" of contacts: "all exchange contacts" (which are the gmail synced contacts) "all icloud" and "all contacts." Is it possible to add a new contact after, say, receiving a phone call from a previously unsaved number and having it go directly to my gmail contacts?

If you want the contact to sync with Gmail, you need to create it in the "Exchange Contacts". I suspect your adding it to the iCloud contacts. They are separate and do not speak to each other.

I just experimented and find that the contact saved via the phone function goes to"all icloud" and hence "all contacts" but not to the exchange. I'm disappointed that I can't just have one database of contact info that syncs everywhere I need it. No workarounds to this, huh?

Not really without creating a mess. Of course, it depends partially on why this matters. Did you set up and do you use a @me.com email address? If not, there is no reason to sync your contacts with iCloud at all instead of just sticking with Google. Your contacts are synced to/backed up in the cloud either way, so why does it matter where they are?
I guess I'm confused about what you need to accomplish. Where do you need the contacts to be?
