how can I delete some of the apps that came with my iphone , that I won't use ? like twitter or youtube?

Hold the app untill it wiggles then there should be a black X in the left corrner of the app hit that X and it will delete the app. Some apps can not be deleted they are built into the phone.

well the problem is that you can not delete those because they are apps that are downoaded on the system's private files partition so you can not change anything on that partition...

are you jailbroken?

You can not delete built-in apps. Move them to a common folder, call them junk and move the folder to the last screen.
