I plugged my iphone into my computer, itunes popped up and said an upgrade was due so I hit it and it updated my iphone thinking it was my ipod and changed everything and deleted all of my photos, is there any way of changing this back?

There is nothing to get back. There is no way to downgrade and even if there was, it would not magically make content re-appear.

Pictures taken with the device are designed to be copied to the computer regularly like with any digital camera. Simply sync them back.
