i wanted to restore my phone so i backed it up on my itunes.

after restoring, my contacts were in my phone but all of my apps and photos were gone

how can i get them back?

Sync with iTunes to restore your apps (the backup only includes app data, not apps).  If they aren't in your iTunes library you can download them again for free (http://support.apple.com/kb/HT2519).  Not sure why you didn't get your photos back, camera roll photos should have been stored in the backup.
